3 eggs whites and yolks seperated
80g sugar
pinch of salt
1/2tsp vanilla
90g cake flour
30g melted butter
30ml milk

method
1. Preheat oven at 175c. Wisk egg whites and sugar until fluffy and resembles a merangue like mixture. Add the egg yolks, salt and vanilla, mix
2. Silft in the cake flour and gently found into the mix.
3. In a seprate bowl comboine both butter and milk together. then add a scoop of the cake mix. combine until hargmonous. then add back to cake mix.
4. Pour mix into a 15 inch cake tin and bake for 30 minutes until ready. once the cake is cooked, leave to cool completly (overnight idealy)
5. Wisk together cream, sugar and vanilla until whipped and peaks form.
6. Slice cake in half add layer of cream followed by fruit, thop half of cake. can either add cream on top or dust with icing sugar to resemble a victoria sponge.
